Ingredients

The pasta salad

  • 10 oz. bow tie pasta
  • 2 cups cooked and cooled, diced chicken breasts
  • 12 oz. red grapes, halved
  • 1 cup diced celery
  • ¾ cup Fisher Sliced Almonds
  • ½ cup sliced green onions
  • cup dried cranberries (optional)

The dressing

  • ½ cup fat free plain Greek Yogurt
  • ½ cup full fat mayonnaise
  • 3 Tbsp white wine vinegar or apple cider vinegar
  • 3 Tbsp honey
  • 2 Tbsp granulated sugar
  • Tbsp poppy seeds
  • ½ tsp salt

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse with cold water.
  2. In a mixing bowl, whisk together the Greek yogurt, mayonnaise, vinegar, honey, sugar, poppy seeds, and salt.
  3. In a salad bowl, combine the drained pasta, chicken, grapes, celery, almonds, green onions, and cranberries.
  4. Pour the dressing over the salad and toss to coat evenly, adjusting salt to taste.
  5. Chill the salad for at least 30 minutes before serving to allow flavors to meld.
