Ingredients

Pastry Cream

  • 2 cups milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 pinch salt
  • ¼ cup cornstarch
  • 1 large egg
  • 2 large egg yolks
  • 2 tsp vanilla extract

Crust

  • 1⅓ cups finely crushed graham cracker crumbs
  • 2 Tbsp granulated sugar
  • cup unsalted butter

Toppings

  • cup caramel sauce
  • cups heavy cream
  • Tbsp granulated sugar
  • 4-5 pieces bananas
  • to taste optional grated bittersweet chocolate

Instructions

  1. Prepare the pastry cream by combining milk, cream, sugar, and salt in a saucepan and bringing to a light boil.
  2. In a bowl, whisk together some sugar and cornstarch, then add the egg and yolks, mixing until fluffy.
  3. Combine the hot milk mixture with the egg mixture, then return to the saucepan and cook until thickened.
  4. Strain the mixture, cover with plastic wrap, and chill for about 4 hours.
  5. For the crust, mix graham cracker crumbs and sugar, then add melted butter until moistened.
  6. Whip heavy cream until soft peaks form, then add sugar and whip until stiff peaks form.
  7. Assemble the pies by layering graham cracker mixture, banana slices, pastry cream, more banana slices, caramel sauce, and whipped cream.
  8. Garnish with chocolate shavings if desired and refrigerate until serving.
