Instructions
- Prepare the pastry cream by combining milk, cream, sugar, and salt in a saucepan and bringing to a light boil.
- In a bowl, whisk together some sugar and cornstarch, then add the egg and yolks, mixing until fluffy.
- Combine the hot milk mixture with the egg mixture, then return to the saucepan and cook until thickened.
- Strain the mixture, cover with plastic wrap, and chill for about 4 hours.
- For the crust, mix graham cracker crumbs and sugar, then add melted butter until moistened.
- Whip heavy cream until soft peaks form, then add sugar and whip until stiff peaks form.
- Assemble the pies by layering graham cracker mixture, banana slices, pastry cream, more banana slices, caramel sauce, and whipped cream.
- Garnish with chocolate shavings if desired and refrigerate until serving.
