Two-Person Banana Cream Pies

Ingredients

The crust

  • 4 pieces graham crackers, crushed
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted

The filling

  • 1 piece banana + a few extra banana slices for layering (ideally 1 ½ bananas)
  • 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1 pinch salt
  • 1 piece egg yolk
  • ½ cup whole milk
  • 2 tablespoons whole milk
  • 1 tablespoon butter
  • a tiny splash vanilla

Instructions

  1. Preheat the oven to 350°F.
  2. Combine crushed graham crackers, sugar, and melted butter, then press into two 8-ounce ramekins.
  3. Place the ramekins on a baking sheet with one unpeeled banana and bake for 10 minutes until the banana is soft and the crusts are set.
  4. In a small saucepan, whisk together sugar, cornstarch, salt, and egg yolk without heat.
  5. Slowly whisk in the milk until mostly smooth, then bring to a low simmer over low heat, whisking frequently until thickened.
  6. Remove from heat and stir in butter and vanilla.
  7. Transfer the cooled pudding to a blender with the roasted banana and blend until mostly smooth.
  8. Top the baked crusts with banana slices, pour the filling over, cover, and refrigerate for 2-3 hours until set.
  9. Top with whipped cream and serve.
