Two-Person Banana Cream Pies

Instructions
- Preheat the oven to 350°F.
- Combine crushed graham crackers, sugar, and melted butter, then press into two 8-ounce ramekins.
- Place the ramekins on a baking sheet with one unpeeled banana and bake for 10 minutes until the banana is soft and the crusts are set.
- In a small saucepan, whisk together sugar, cornstarch, salt, and egg yolk without heat.
- Slowly whisk in the milk until mostly smooth, then bring to a low simmer over low heat, whisking frequently until thickened.
- Remove from heat and stir in butter and vanilla.
- Transfer the cooled pudding to a blender with the roasted banana and blend until mostly smooth.
- Top the baked crusts with banana slices, pour the filling over, cover, and refrigerate for 2-3 hours until set.
- Top with whipped cream and serve.
