Ingredients

The dough

  • 1 ¾ cups all-purpose flour
  • cup granulated sugar
  • ¼ cup coarse cornmeal
  • ¼ teaspoon salt
  • ½ cup cold butter
  • cup buttermilk

The filling

  • 2 cups mixed berries

For finishing

  • 1 large egg (beaten)
  • 2 tablespoons turbinado sugar

Instructions

  1. Combine the flour, sugar, cornmeal, and salt in a food processor and pulse a few times.
  2. Add the cold butter and pulse until the mixture resembles coarse meal.
  3. Slowly pour in the buttermilk while processing until a dough forms.
  4. Shape the dough into a ball, wrap in plastic, and refrigerate for at least 45 minutes.
  5. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.
  6. Divide the dough into four parts and roll each into a 6-inch circle on parchment.
  7. Place mixed berries in the center of each circle, leaving a border, and fold the edges over the berries.
  8. Brush the edges with the beaten egg and sprinkle with turbinado sugar.
  9. Bake for 40-45 minutes until golden brown, then cool on a wire rack for at least 20 minutes.
