Ingredients

The sauce

  • 2 tablespoons Gochujang
  • 2 tablespoons Tamari
  • 2 tablespoons raw cashew butter
  • 1-2 tablespoons maple syrup or agave nectar
  • 1 tablespoon lime juice
  • 1 tablespoon unseasoned rice vinegar
  • 1 tablespoon tomato paste
  • 2 cloves garlic
  • 1 inch piece ginger
  • 2 teaspoons arrowroot powder
  • 1 cup vegetable stock

The noodles and veggies

  • 10 oz noodles of choice
  • 1 tablespoon avocado oil
  • 1 medium carrot
  • 1 bunch broccolini
  • 2 cups snap peas
  • 1 cup frozen shelled edamame
  • to taste sea salt and ground black pepper
  • 3 stalks green onions
  • to garnish sesame seeds

Instructions

  1. Blend all sauce ingredients until smooth and set aside.
  2. Cook the noodles according to package directions, draining them slightly early.
  3. Sauté the carrots, broccolini, and snap peas in oil until softened, then add edamame.
  4. Combine the noodles and sauce in the skillet, stirring until heated through.
  5. Add green onions, toss, and serve hot with sesame seeds if desired.
