Gochujang-Sesame Noodles

Ingredients

The noodles

  • 8–10 oz. fresh or dried wheat noodles
  • Kosher salt to taste

The sauce

  • ¼ cup gochujang
  • 3 Tbsp. soy sauce
  • 2 Tbsp. light or dark brown sugar
  • 2 Tbsp. tahini
  • 2 tsp. toasted sesame oil
  • 2 Tbsp. vegetable oil

The vegetables

  • 1 bunch broccoli rabe, coarsely chopped
  • 4 cloves garlic, finely chopped
  • Freshly cracked black pepper to taste
  • Handful of torn basil leaves

For serving

  • Toasted sesame seeds
  • Lime wedges

Instructions

  1. Cook noodles in boiling salted water according to package directions, then drain and rinse under cool water.
  2. In a small bowl, whisk together gochujang, soy sauce, brown sugar, tahini, sesame oil, and 2 Tbsp. water; set aside.
  3. Heat vegetable oil in a wok or large skillet over medium-high heat. Add broccoli rabe and garlic, season with salt and pepper, and cook until tender.
  4. Add the sauce to the pan and cook until slightly thickened. Toss in the noodles and basil until well coated.
  5. Serve the noodles in bowls topped with sesame seeds and basil, with lime wedges on the side.
