Instructions
- Preheat the broiler.
- Heat olive oil in a skillet over medium-high heat.
- Add fajita seasoning, zucchini, and corn, cooking until zucchini is softened.
- Stir in black beans and heat through before removing from heat.
- Place tortillas on a baking sheet and broil until crisp.
- Add cheese and vegetable mixture to each tortilla.
- Return to broiler until cheese is melted.
- Add desired toppings and serve.
