Ingredients

The base

  • 4 whole whole wheat tortillas

The filling

  • 1 tbsp olive oil
  • 1 tbsp fajita seasoning
  • ½ c. corn kernels
  • 1 ½ c. cooked black beans
  • 1 c. reduced-fat shredded Mexican blend cheese

Optional toppings

  • to taste cilantro
  • to taste cherry tomatoes
  • to taste avocado
  • to taste sour cream
  • to taste salsa
  • to taste green onions
  • to taste lime wedges
  • to taste lettuce

Instructions

  1. Preheat the broiler.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add fajita seasoning, zucchini, and corn, cooking until zucchini is softened.
  4. Stir in black beans and heat through before removing from heat.
  5. Place tortillas on a baking sheet and broil until crisp.
  6. Add cheese and vegetable mixture to each tortilla.
  7. Return to broiler until cheese is melted.
  8. Add desired toppings and serve.
