Ingredients

The filling

  • 1 can black beans
  • 1 can vegetarian refried beans
  • 1 can diced tomatoes with green chiles
  • ¼ cup chopped cilantro
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon salt

The tacos

  • 12 6-inch flour tortillas
  • 1 cup Mexican blend shredded cheese

Instructions

  1. Preheat the oven to 375°F.
  2. Drain and rinse the black beans, and drain the refried beans and canned tomatoes.
  3. In a large bowl, combine black beans, refried beans, tomatoes, cilantro, chili powder, cumin, oregano, and salt.
  4. Lay out flour tortillas on a baking sheet without overlapping.
  5. Scoop ¼ cup of filling onto half of each tortilla and spread it slightly.
  6. Sprinkle cheese over the filling.
  7. Fold the tacos over and press down gently.
  8. Bake for 11-13 minutes, flipping halfway through if desired.
  9. The tacos are done when golden and crispy.
