Vegetarian Black Bean Tacos

Ingredients

The Beans

  • 1 tbsp olive oil
  • 1 400 ml can black beans with their juices
  • 3 tbsp Sofrito authentic Mexican tomato cooking base or tomato paste
  • 2 tbsp green salsa (optional)
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp cumin spice
  • 1 tsp chili powder
  • dash salt and pepper

The Toppings/Taco

  • 7-8 pieces authentic corn flour tortillas
  • 1 cup queso
  • ½ cup crema
  • ½ cup finely chopped white onion
  • ¼ cup green salsa
  • ¼ cup fresh cilantro, finely chopped
  • to taste fresh lime wedges

For the Guacamole

  • 2 large avocados
  • 1 packet Simply Organic Guacamole Mix
  • ¼ cup finely chopped white onion
  • to taste fresh cilantro for garnish and mixing

Instructions

  1. Prepare all taco fillings and set aside.
  2. Heat olive oil in a medium-sized pot, add black beans, and warm through. Stir to coat beans and reduce heat to low, cooking for 15 minutes or until soft.
  3. Prepare guacamole by mashing avocados with guacamole mix, onion, and cilantro until desired consistency.
  4. Char tortillas over an open flame using metal tongs, cooking for 15-20 seconds on each side.
  5. Assemble tacos by adding bean mix and toppings to the tortillas.
