Ingredients

The tacos

  • 1 package baked corn tortillas
  • 1 can seasoned refried beans
  • 1 cup melty cheese

The toppings

  • to taste diced fresh tomato
  • to taste scallions
  • to taste cilantro
  • to taste avocado
  • to taste sour cream
  • to taste hot sauce
  • to taste lime

Instructions

  1. Preheat the oven to 375°F.
  2. Line a baking dish with parchment paper and arrange the taco shells.
  3. Spoon 2 heaping tablespoons of beans into each shell and add hot sauce if desired.
  4. Top the beans with grated cheese.
  5. Bake for 15-20 minutes until warmed through.
  6. While baking, prepare the toppings: dice the tomato, slice the avocado, and chop the cilantro and scallions.
  7. Garnish the baked tacos with the fresh toppings and serve.
