Taco Bake

tortilla chips, coarsely crushed

cheddar cheese, shredded

toppings (shredded lettuce, diced tomato, sour cream, sliced olives)

Instructions
- Preheat the oven to 350°F and coat a 2-quart baking dish with cooking spray.
- Heat olive oil in a large pan over medium-high heat, then add ground beef and cook for 5-6 minutes, breaking it up.
- Add onion and cook for an additional 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
- Stir in taco seasoning, diced tomatoes, and refried beans, then simmer for 3-4 minutes until thickened.
- Spread crushed tortilla chips in the bottom of the prepared pan, pour the beef mixture over the chips, and top with cheese.
- Bake for 15-20 minutes until the cheese is melted, add toppings if desired, and serve immediately.
