Ingredients

The filling

  • 2 teaspoons olive oil
  • 1 pound ground beef (90% lean)
  • ½ cup onion, finely diced
  • 1 teaspoon garlic, minced
  • 1 packet taco seasoning
  • 14.5 ounces diced tomatoes (do not drain)
  • 16 ounces refried beans

The base and toppings

  • cups tortilla chips, coarsely crushed
  • cups cheddar cheese, shredded
  • to taste toppings (shredded lettuce, diced tomato, sour cream, sliced olives)
  • as needed cooking spray

Instructions

  1. Preheat the oven to 350°F and coat a 2-quart baking dish with cooking spray.
  2. Heat olive oil in a large pan over medium-high heat, then add ground beef and cook for 5-6 minutes, breaking it up.
  3. Add onion and cook for an additional 3-4 minutes until translucent, then add garlic and cook for 30 seconds.
  4. Stir in taco seasoning, diced tomatoes, and refried beans, then simmer for 3-4 minutes until thickened.
  5. Spread crushed tortilla chips in the bottom of the prepared pan, pour the beef mixture over the chips, and top with cheese.
  6. Bake for 15-20 minutes until the cheese is melted, add toppings if desired, and serve immediately.
