Instructions
- Peel and dice the potatoes.
- Cook the potatoes in boiling water for about 10 minutes.
- Chop the onion and carrot finely while the potatoes are cooking.
- Heat olive oil in a frying pan and cook the ground beef until mostly browned.
- Add the onion and carrot to the beef and cook for about 5 minutes, seasoning with salt and pepper.
- Check if the potatoes are cooked by inserting a skewer.
- Strain the water from the potatoes, return them to the pot, and shake to rough up the outsides.
- Mash the potatoes while warm and combine with the cooked beef, onion, and carrot.
- Divide the mixture into 8 equal-sized flat ovals.
- Mix the egg, water, mayonnaise, and flour to create a batter.
- Coat each oval with the batter and then with panko crumbs.
- Heat oil in a deep pan to about 350°F (180°C).
- Fry the potato ovals until crispy and golden brown.
- Serve with salad leaves or any side dish of your choice.
