Mashed Potato Croquettes

Instructions
- Mix egg yolks, mashed potatoes, Parmesan, chives, and flour in a bowl and roll into walnut-sized balls. Chill for at least 2 hours.
- Beat the eggs in one bowl and place breadcrumbs in another.
- Heat vegetable oil in a skillet until hot. Dip potato balls in egg, then roll in breadcrumbs.
- Fry the coated potato balls in batches until golden brown and crisp, about 3-4 minutes. Drain on paper towels.
