Ingredients

The mixture

  • 2 cups cold leftover mashed potatoes
  • 1 large egg, lightly beaten
  • ¼ cup real bacon bits
  • ¾ cup shredded cheddar cheese
  • 2 tablespoons Italian parsley leaves, chopped

For coating and frying

  • ½ cup dry bread crumbs
  • as needed unit oil for deep frying

Instructions

  1. Let the mashed potatoes sit at room temperature for 30 minutes.
  2. Stir in the egg, bacon bits, cheddar cheese, and chopped parsley until well combined.
  3. Shape the mixture into 1-inch balls and roll them in bread crumbs.
  4. Chill the potato balls in the refrigerator for 15 to 30 minutes.
  5. Heat oil in a skillet to 375°F (190°C).
  6. Fry the potato balls in batches until they turn light brown, then drain on paper towels.
  7. Serve immediately.
