Loaded Mashed Potato Cakes

Ingredients

  • 24 oz package refrigerated mashed potatoes
  • 1 ½ cups panko crumbs
  • ¾ cup reduced fat shredded cheddar cheese
  • 2 tablespoons real bacon pieces
  • 2 tablespoons chopped green onions

Instructions

  1. Combine all ingredients except cooking spray in a large bowl.
  2. Shape the potato mixture into 16 cakes, each about 2 inches in diameter.
  3. Heat a large nonstick skillet over medium heat and coat with cooking spray.
  4. Add half of the potato cakes to the pan and cook for 2 minutes on each side until golden brown.
  5. Repeat the cooking process with the remaining potato cakes.
