Crispy Mashed Potato Cakes

Ingredients

The cakes

  • 2 cups cold mashed potatoes
  • 1 extra large egg
  • ½ cup panko
  • ½ cup grated cheese
  • as needed amount olive oil or avocado oil

Optional additions

  • as desired amount jalapeno
  • as desired amount fresh herbs (dill, chives, cilantro, basil, parsley)
  • as desired amount green onions
  • as desired amount bacon bits
  • as desired amount onion
  • as desired amount garlic or garlic powder
  • as desired amount black pepper

Instructions

  1. Mix mashed potatoes, egg, panko, and cheese in a bowl until combined.
  2. Form eight golf-ball-sized balls with wet hands.
  3. Flatten the balls into cakes on a plate with panko, coating both sides.
  4. Heat oil in a skillet over medium-low heat and pan-sear each cake until golden brown.
  5. Keep the cakes warm in an oven until ready to serve.
