Mashed Potato Pancakes

Ingredients

  • 2 cups mashed potatoes
  • 1-2 eggs eggs
  • ¼ cup flour
  • ½ teaspoon onion powder
  • as needed none oil for frying

Instructions

  1. Mix all ingredients in a large bowl until well combined.
  2. Heat oil in a frying pan or skillet over medium heat.
  3. Add patties to the hot oil, cooking two or three at a time to avoid overcrowding.
  4. Cook until the bottom is browned and the sides are set.
  5. Flip the patties and cook for another 3 to 4 minutes until browned and cooked through.
  6. Repeat with the remaining patties and serve.
