Loaded Mashed Potato Casserole

Instructions
- Prepare the potatoes by peeling and cutting them into even-sized chunks, then place in water to prevent discoloration.
- Wash and rinse the potatoes until the water runs clear, then place them in a pot with salt and enough water to cover.
- Bring to a boil and cook until fork-tender, then drain the water.
- Simmer the potatoes for a minute to remove moisture, then transfer to a bowl.
- Add butter, sour cream, garlic, and black pepper to the potatoes and mash, adding warm milk until fluffy.
- Stir in the cheeses and half of the bacon, adjusting salt and pepper to taste.
- Scoop the mashed potatoes into a baking dish.
- Preheat the oven to 350°F and bake uncovered for 18-20 minutes until heated through.
- Remove from the oven, add remaining cheese and bacon, and bake for an additional 5 minutes.
- Sprinkle with green onions and serve.
