Ingredients

Mashed Potatoes

  • 2½-3 pounds russet potatoes
  • 1-2 teaspoons salt
  • 4 ounces butter, softened
  • ½ cup sour cream
  • ¾-1 cup warm milk
  • to taste black or white pepper

Loaded Casserole

  • cup cheddar cheese, grated
  • cup parmesan cheese, grated
  • ¼ cup Gouda cheese, grated (optional)
  • ½ cup bacon crumbles
  • 3 green onions or chives, chopped
  • to taste salt and pepper

Instructions

  1. Prepare the potatoes by peeling and cutting them into even-sized chunks, then place in water to prevent discoloration.
  2. Wash and rinse the potatoes until the water runs clear, then place them in a pot with salt and enough water to cover.
  3. Bring to a boil and cook until fork-tender, then drain the water.
  4. Simmer the potatoes for a minute to remove moisture, then transfer to a bowl.
  5. Add butter, sour cream, garlic, and black pepper to the potatoes and mash, adding warm milk until fluffy.
  6. Stir in the cheeses and half of the bacon, adjusting salt and pepper to taste.
  7. Scoop the mashed potatoes into a baking dish.
  8. Preheat the oven to 350°F and bake uncovered for 18-20 minutes until heated through.
  9. Remove from the oven, add remaining cheese and bacon, and bake for an additional 5 minutes.
  10. Sprinkle with green onions and serve.
