Ingredients

The potatoes

  • 2 pounds russet potatoes

The mixture

Instructions

  1. 1. Boil water in a pot and scrub the potatoes without peeling them, then dice into 1 to 2 inch pieces.
  2. 2. Cook the diced potatoes in boiling water until tender, about 15 to 20 minutes, then drain.
  3. 3. Mash the potatoes with an electric mixer or hand masher, then mix in butter, milk, salt, and pepper until smooth.
  4. 4. Preheat the oven broiler to high and transfer the mashed potatoes to a baking dish.
  5. 5. Top the potatoes with grated cheese and broil until melted and slightly browned, about 5 to 8 minutes.
