Instructions
- 1. Boil water in a pot and scrub the potatoes without peeling them, then dice into 1 to 2 inch pieces.
- 2. Cook the diced potatoes in boiling water until tender, about 15 to 20 minutes, then drain.
- 3. Mash the potatoes with an electric mixer or hand masher, then mix in butter, milk, salt, and pepper until smooth.
- 4. Preheat the oven broiler to high and transfer the mashed potatoes to a baking dish.
- 5. Top the potatoes with grated cheese and broil until melted and slightly browned, about 5 to 8 minutes.
