Cheesy Ham and Potato Casserole

Instructions
- 1. Preheat the oven to 400°F.
- 2. Melt butter in a saucepan over medium heat and add chopped onion, cooking until soft.
- 3. Stir in flour and cook for 2 minutes.
- 4. Pour in milk and simmer until the sauce thickens, about 3-4 minutes.
- 5. Remove from heat and stir in cheese until melted.
- 6. In a baking dish, layer half of the sliced potatoes, followed by half of the diced ham.
- 7. Repeat the layers with the remaining potatoes and ham.
- 8. Pour the cheese sauce over the top layer and add additional cheese if desired.
- 9. Cover the dish with foil and bake for 45-50 minutes until potatoes are fork-tender.
- 10. Remove the foil and bake for an additional 20-25 minutes until cheese is brown and bubbly.
