Ingredients

The fritters

  • 3 cups prepared mashed potatoes, chilled
  • ½ cup flour
  • 2 tablespoons flour
  • 1 large egg, beaten
  • 1 tablespoon fresh chopped chives
  • 1 teaspoon sea salt
  • 4 tablespoons olive oil

Optional toppings

  • to taste sour cream

Instructions

  1. Combine the mashed potatoes, ½ cup of flour, egg, chives, and sea salt in a large bowl.
  2. Mix the ingredients together to form a thick batter, adding more flour if necessary.
  3. Shape the batter into 12 thin patties and place them on a plate.
  4. Heat oil in a nonstick skillet over medium-high heat and cook the fritters in batches.
  5. Cook each side for about 5 minutes until golden brown.
  6. Transfer the cooked fritters to a paper towel-lined plate and serve hot with optional sour cream.
