Leftover Mashed Potato Waffles

Ingredients

  • 3 tablespoons tapioca flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon fine sea salt
  • to taste freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • 2 green onions thinly sliced
  • 2 tablespoons chopped fresh dill
  • 2 cups leftover mashed potatoes
  • as needed oil spray for the waffle iron

Instructions

  1. Preheat the oven to 250°F and set up a cooling rack on a baking sheet inside the oven.
  2. In a large bowl, whisk together the tapioca flour, garlic powder, onion powder, salt, pepper, olive oil, and water until combined.
  3. Add the green onions, dill, and mashed potatoes to the bowl and mix until evenly combined.
  4. Preheat your waffle iron to the highest setting.
  5. Spray the waffle iron with oil spray, then add a slightly heaped ⅓ cup of the batter to the center of the iron.
  6. Close the lid and apply some pressure to flatten the mixture.
  7. Cook until the waffle is deep golden brown, then remove it with a fork.
  8. Keep the waffle warm in the oven or serve immediately.
  9. Repeat the process with the remaining batter and enjoy with toppings of your choice.
