Instructions
- Preheat the oven to 250°F and set up a cooling rack on a baking sheet inside the oven.
- In a large bowl, whisk together the tapioca flour, garlic powder, onion powder, salt, pepper, olive oil, and water until combined.
- Add the green onions, dill, and mashed potatoes to the bowl and mix until evenly combined.
- Preheat your waffle iron to the highest setting.
- Spray the waffle iron with oil spray, then add a slightly heaped ⅓ cup of the batter to the center of the iron.
- Close the lid and apply some pressure to flatten the mixture.
- Cook until the waffle is deep golden brown, then remove it with a fork.
- Keep the waffle warm in the oven or serve immediately.
- Repeat the process with the remaining batter and enjoy with toppings of your choice.
