Whole-Grain Sweet Potato Waffles

Ingredients

The batter

  • 1 large orange sweet potato or yam (about 1 cup cooked, mashed)
  • 4 pieces eggs
  • ¼ cup expeller-pressed canola oil
  • ¾ cup lowfat milk
  • teaspoons grated orange zest
  • cups whole-wheat pastry flour
  • ½ cup fine whole-grain cornmeal
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon

For cooking

  • 1 spray expeller-pressed canola oil spray

Instructions

  1. Poke the sweet potato with a fork and microwave until tender, about 4-7 minutes.
  2. Once cool, peel and mash the sweet potato in a large mixing bowl until smooth.
  3. Preheat the waffle iron.
  4. Add eggs to the bowl and whisk until blended.
  5. Stir in the canola oil, then add the milk and orange zest.
  6. Add flour, cornmeal, baking powder, salt, and cinnamon, stirring until just moistened.
  7. Spray the waffle iron with vegetable oil.
  8. Pour a 1-cup scoop of batter onto the griddle and cook for 3½–4 minutes until golden brown.
  9. Continue cooking the remaining batter and serve hot with toppings.
