Whole-Grain Sweet Potato Waffles

Instructions
- Poke the sweet potato with a fork and microwave until tender, about 4-7 minutes.
- Once cool, peel and mash the sweet potato in a large mixing bowl until smooth.
- Preheat the waffle iron.
- Add eggs to the bowl and whisk until blended.
- Stir in the canola oil, then add the milk and orange zest.
- Add flour, cornmeal, baking powder, salt, and cinnamon, stirring until just moistened.
- Spray the waffle iron with vegetable oil.
- Pour a 1-cup scoop of batter onto the griddle and cook for 3½–4 minutes until golden brown.
- Continue cooking the remaining batter and serve hot with toppings.
