Sweet Potato Waffles with Blueberry Orange Infused Syrup

Ingredients

The waffles

  • 1 cup All Purpose Flour
  • ¾ cup Whole Wheat Flour
  • tsp Baking Powder
  • 1 tsp Baking Soda
  • tsp Pumpkin Pie Spice
  • ½ tsp Salt
  • 3 Large Eggs, separated
  • cup Sugar
  • 1 cup Sweet Potato, mashed
  • ¼ cup Butter, melted and cooled
  • ¼ cup Coconut oil, melted and cooled
  • cups Buttermilk
  • 1 tsp Vanilla

The syrup

  • 1 pint Blueberries
  • ½ cup Maple Syrup
  • Zest of 1 Orange
  • Juice of 2 Oranges

Instructions

  1. Mix the flours, baking powder, baking soda, pumpkin pie spice, and salt in a medium bowl and set aside.
  2. Whip the egg whites in a stand mixer until stiff peaks form.
  3. In another bowl, mix the egg yolks, sugar, sweet potato, butter, coconut oil, buttermilk, and vanilla.
  4. Gradually add the dry ingredients to the wet mixture in three batches, mixing until just combined.
  5. Gently fold the whipped egg whites into the batter in three additions.
  6. Preheat the waffle iron according to its instructions.
  7. To make the syrup, combine blueberries and maple syrup in a saucepan over medium heat.
  8. Zest one orange and add the juice from both oranges to the saucepan, cooking until the blueberries burst and the mixture thickens.
  9. Serve the waffles drizzled with the blueberry syrup, and optionally garnish with raspberries, Greek yogurt, or toasted pecans.
