Instructions
- Mix the flours, baking powder, baking soda, pumpkin pie spice, and salt in a medium bowl and set aside.
- Whip the egg whites in a stand mixer until stiff peaks form.
- In another bowl, mix the egg yolks, sugar, sweet potato, butter, coconut oil, buttermilk, and vanilla.
- Gradually add the dry ingredients to the wet mixture in three batches, mixing until just combined.
- Gently fold the whipped egg whites into the batter in three additions.
- Preheat the waffle iron according to its instructions.
- To make the syrup, combine blueberries and maple syrup in a saucepan over medium heat.
- Zest one orange and add the juice from both oranges to the saucepan, cooking until the blueberries burst and the mixture thickens.
- Serve the waffles drizzled with the blueberry syrup, and optionally garnish with raspberries, Greek yogurt, or toasted pecans.
