Ingredients

The waffles

  • 3 strips no sugar added bacon, cooked to crisp & chopped
  • 1 each green onion, thinly sliced
  • 2 large eggs
  • ¼ tsp crushed red pepper
  • ¼ tsp garlic powder
  • ¼ tsp sea salt
  • as needed none butter or ghee for greasing the waffle iron

Optional toppings

  • as desired none fried eggs
  • as desired none hot sauce
  • as desired none avocado
  • as desired none herbs
  • as desired none onion

Instructions

  1. Shred the sweet potato and press it between paper towels to remove excess liquid.
  2. Preheat the waffle iron to medium-high heat.
  3. In a bowl, mix the sweet potato, bacon, green onions, eggs, and seasonings.
  4. Grease the waffle iron with butter or ghee.
  5. Spread the mixture onto the waffle iron, ensuring it fills the crevices.
  6. Close the lid and cook for 5-6 minutes until golden brown and crisp.
