Ingredients

  • ½ cup gluten free rolled oats
  • 1 teaspoon baking powder
  • a pinch sea salt
  • ¼ teaspoon cinnamon (optional)
  • 185 grams sweet potato, peeled and chopped (about 1 ¼ cup grated)
  • 2 eggs
  • 3 tablespoons almond or non-dairy milk of choice
  • 2 tablespoons flax meal
  • 1 tablespoon creamy nut butter

Instructions

  1. Blend the oats until they reach a mealy texture.
  2. Mix the ground oats with baking powder, salt, cinnamon, and sweetener in a large bowl.
  3. Blend the chopped sweet potato until grated.
  4. Combine the grated potato with eggs, milk, flax meal, and nut butter in a blender until well-mixed.
  5. Combine the potato mixture with the oat mixture and mix until combined.
  6. Let the batter sit for 10 minutes.
  7. Preheat the waffle iron and spray it with nonstick cooking oil.
  8. Pour ⅓ cup of batter into the waffle iron and cook for 2-4 minutes.
  9. Repeat until all batter is used and let the waffles cool.
