Instructions
- Blend the oats until they reach a mealy texture.
- Mix the ground oats with baking powder, salt, cinnamon, and sweetener in a large bowl.
- Blend the chopped sweet potato until grated.
- Combine the grated potato with eggs, milk, flax meal, and nut butter in a blender until well-mixed.
- Combine the potato mixture with the oat mixture and mix until combined.
- Let the batter sit for 10 minutes.
- Preheat the waffle iron and spray it with nonstick cooking oil.
- Pour ⅓ cup of batter into the waffle iron and cook for 2-4 minutes.
- Repeat until all batter is used and let the waffles cool.
