Sweet Potato Fritters with Herb Dip

The herb dip

Instructions
- Heat about 3 inches of oil in a deep pot to 365º F.
- In a mixing bowl, combine the mashed sweet potatoes, ricotta, and confectioners' sugar, seasoning with salt and pepper until smooth. Gradually fold in the flour.
- Drop heaping teaspoons of the batter into the hot oil and fry until golden brown, about 1 to 2 minutes, turning as needed. Drain on paper towels and season with salt.
- For the herb dip, mix all the ingredients together in a small bowl until smooth and refrigerate until ready to serve.
