Ingredients

The fritters

  • 2 large sweet potatoes, peeled; cooked and mashed
  • 1 cup whole milk ricotta cheese
  • ¼ cup confectioners' sugar
  • to taste Kosher salt
  • to taste black pepper
  • ½ cup white wheat flour
  • as needed vegetable or peanut oil for frying

The herb dip

  • ¾ cup sour cream
  • ½ cup cream cheese, softened
  • ¼ cup heavy cream
  • 2 teaspoons fresh dill, minced
  • 3 tablespoons fresh chives, minced
  • 2 tablespoons fresh basil leaves, minced
  • to taste salt
  • to taste pepper

Instructions

  1. Heat about 3 inches of oil in a deep pot to 365º F.
  2. In a mixing bowl, combine the mashed sweet potatoes, ricotta, and confectioners' sugar, seasoning with salt and pepper until smooth. Gradually fold in the flour.
  3. Drop heaping teaspoons of the batter into the hot oil and fry until golden brown, about 1 to 2 minutes, turning as needed. Drain on paper towels and season with salt.
  4. For the herb dip, mix all the ingredients together in a small bowl until smooth and refrigerate until ready to serve.
