Ingredients

The Sweet Potato Fries

  • 1 lb sweet potatoes, peeled and cut into ¼" matchsticks
  • 2 T extra virgin olive oil
  • ½ tsp cumin
  • ½ tsp oregano
  • ½ tsp coriander
  • ½ tsp kosher salt
  • 1 tsp parsley
  • tsp black pepper

The Honey-Lime Dip

  • 6 oz plain low-fat yogurt
  • 1 T mayo
  • ½ T honey
  • 1 T fresh lime juice
  • ¼ tsp cumin
  • tsp oregano
  • 1 tsp parsley
  • ½ tsp onion powder
  • ½ tsp kosher salt

Instructions

  1. Preheat the oven to 425°F.
  2. Cut sweet potatoes into matchsticks and place them on a baking sheet.
  3. Drizzle olive oil over the sweet potatoes and toss to coat.
  4. Sprinkle the seasoning mixture over the fries and toss again.
  5. Arrange the sweet potatoes in a single layer on the baking sheet.
  6. Bake for 15 minutes, then flip the fries and return to the oven.
  7. Bake for an additional 15-20 minutes or until lightly browned and crisp.
  8. While the fries are baking, mix all dip ingredients in a bowl and chill in the fridge.
  9. Serve the fries immediately with the honey-lime dip.
