Crispy Baked Sweet Potato Fries

Instructions
- Preheat the oven to 450ºF.
- Cut the sweet potatoes into ¼-inch strips and place them in a bowl with olive oil, ground cinnamon, salt, and pepper. Toss to coat.
- Line two baking sheets with parchment paper and spread the sweet potato fries in a single layer.
- Bake for 15-17 minutes.
- Remove the fries from the oven, flip them over, and bake for another 15-17 minutes.
- Let the fries cool.
- In a small bowl, mix together the mayonnaise, chipotle pepper, lime juice, garlic powder, and chives.
- Serve the fries with the aioli on the side.
