Ingredients

The sweet potato fries

  • 3 pieces sweet potatoes
  • 3 tablespoons olive oil
  • ¼ teaspoon ground cinnamon
  • to taste salt
  • to taste pepper

The chipotle lime aioli

  • ½ cup mayonnaise
  • 1 large chipotle pepper in adobo sauce
  • 1 teaspoon fresh lime juice
  • teaspoon garlic powder
  • 1 teaspoon chives, chopped

Instructions

  1. Preheat the oven to 450ºF.
  2. Cut the sweet potatoes into ¼-inch strips and place them in a bowl with olive oil, ground cinnamon, salt, and pepper. Toss to coat.
  3. Line two baking sheets with parchment paper and spread the sweet potato fries in a single layer.
  4. Bake for 15-17 minutes.
  5. Remove the fries from the oven, flip them over, and bake for another 15-17 minutes.
  6. Let the fries cool.
  7. In a small bowl, mix together the mayonnaise, chipotle pepper, lime juice, garlic powder, and chives.
  8. Serve the fries with the aioli on the side.
