Ingredients

The beef

  • 2 lb chuck roast, cut into 2 inch cubes

The seasoning

  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder

The oil and broth

  • 2-3 tbsp avocado oil, divided
  • 1 cup beef or chicken broth

Instructions

  1. Cut the beef into 2 inch cubes and place in the Instant Pot.
  2. Mix all the seasonings together in a small bowl.
  3. Drizzle 1-2 tbsp of avocado oil on the beef and toss to coat.
  4. Sprinkle the seasoning mix over the beef and stir to cover as much as possible.
  5. Press the sauté button on the Instant Pot and add more avocado oil to coat the bottom.
  6. Sear the beef on all sides for 1-2 minutes until browned.
  7. Press cancel on the Instant Pot and pour in the broth.
  8. Secure the lid and set the pressure cook time to 30 minutes with a 20 minute natural release.
  9. Release any remaining pressure, then shred the beef with two forks.
