Ingredients

The beef

  • 3 pounds chuck roast, cut into 4 pieces
  • teaspoon kosher salt
  • 1 teaspoon freshly ground pepper
  • 1 cup beef broth
  • 1 cinnamon stick

The aromatics and spices

  • 1 cup finely chopped onion
  • 5 cloves garlic, finely chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 2 bay leaves
  • 3 chipotle peppers in adobo, finely chopped
  • 1 tablespoon adobo sauce

The tomatoes

  • 14 ounces can diced tomatoes, drained

The cooking spray

  • 1 spray olive oil cooking spray

Instructions

  1. Season the beef with salt and pepper.
  2. Set the Instant Pot to the sauté function and spray the inner pot with cooking spray.
  3. Brown the beef in batches for about 3 minutes per side, then remove it to a plate.
  4. Sauté onions and garlic in the pot for 2 minutes.
  5. Add oregano, cumin, and bay leaves, and cook for 1 minute.
  6. Turn off the heat and add the remaining ingredients.
  7. Return the beef and any juices back to the pot.
  8. Close the lid and set the pressure release valve to sealing.
  9. Pressure cook on high for 60 minutes.
  10. Allow a natural release for 10 minutes, then release the remaining steam.
  11. Remove the meat and strain the cooking liquid.
  12. Return the strained liquid to the pot and boil until reduced by half.
  13. Shred the meat and serve with the sauce.
