Instant Pot Braised Beef

The tomatoes

can diced tomatoes, drained
The cooking spray

Instructions
- Season the beef with salt and pepper.
- Set the Instant Pot to the sauté function and spray the inner pot with cooking spray.
- Brown the beef in batches for about 3 minutes per side, then remove it to a plate.
- Sauté onions and garlic in the pot for 2 minutes.
- Add oregano, cumin, and bay leaves, and cook for 1 minute.
- Turn off the heat and add the remaining ingredients.
- Return the beef and any juices back to the pot.
- Close the lid and set the pressure release valve to sealing.
- Pressure cook on high for 60 minutes.
- Allow a natural release for 10 minutes, then release the remaining steam.
- Remove the meat and strain the cooking liquid.
- Return the strained liquid to the pot and boil until reduced by half.
- Shred the meat and serve with the sauce.
