Ingredients

  • 3 pounds beef chuck roast
  • 2/3 cup beer or water
  • 4 cloves garlic
  • 2 pieces chipotles in adobo sauce
  • 1 small white onion
  • 1 can chopped green chiles (4-ounce)
  • 1/4 cup fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon ground cumin
  • 1 tablespoon dried Mexican oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 1 tablespoon olive oil
  • 3 pieces bay leaves

Instructions

  1. Blend the beer, garlic, chipotles, onion, green chiles, lime juice, vinegar, cumin, oregano, salt, pepper, and cloves until smooth.
  2. Sear the beef in the Instant Pot using the sauté function until browned on all sides.
  3. Add the bay leaves and the blended sauce to the pot, mixing to coat the beef.
  4. Seal the lid and set the Instant Pot to cook on manual for 60 minutes.
  5. Release the pressure carefully and remove the lid, discarding the bay leaves.
  6. Shred the beef with two forks and mix it back in the juices before serving.
