Ingredients

The beef and marinade

  • 1 cup beef broth
  • 2 each Chipotles in adobo sauce
  • 1 tablespoon chili powder
  • 2 tablespoons fresh lime juice
  • 1 tablespoon cumin
  • 2 tablespoons apple cider vinegar
  • to taste salt and pepper
  • 1 teaspoon dried oregano
  • 3 pounds beef chuck roast, fat trimmed and sliced into large chunks
  • 3 cloves garlic
  • 1 cup chopped onion

Optional

  • to taste coconut wraps

Instructions

  1. Blend 1/4 cup beef broth, chipotles, garlic, chili powder, oregano, cumin, lime juice, apple cider vinegar, and salt and pepper in a blender.
  2. Marinate the beef chunks in the blended mixture for at least 1 hour or overnight.
  3. Use the sauté function on the Instant Pot to sear the beef chunks on each side.
  4. Remove the beef and sauté the onions and garlic for 2-3 minutes.
  5. Add the beef back into the pot with 1 cup of beef broth.
  6. Seal the pot and cook on high pressure for 60 minutes.
  7. Allow the steam to release naturally for 10 minutes before opening the pot.
  8. Shred the beef with forks and return it to the pot with the juices.
