Instant Pot Barbacoa Beef

beef chuck roast, fat trimmed and sliced into large chunks

Instructions
- Blend 1/4 cup beef broth, chipotles, garlic, chili powder, oregano, cumin, lime juice, apple cider vinegar, and salt and pepper in a blender.
- Marinate the beef chunks in the blended mixture for at least 1 hour or overnight.
- Use the sauté function on the Instant Pot to sear the beef chunks on each side.
- Remove the beef and sauté the onions and garlic for 2-3 minutes.
- Add the beef back into the pot with 1 cup of beef broth.
- Seal the pot and cook on high pressure for 60 minutes.
- Allow the steam to release naturally for 10 minutes before opening the pot.
- Shred the beef with forks and return it to the pot with the juices.
