Easy Instant Pot Beef Barbacoa

Ingredients

The beef

  • 3.5 lb. beef brisket (or beef chuck roast)
  • 1 tablespoon grape seed oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

The sauce

  • 3 large chipotle peppers
  • 2 tablespoons adobo sauce
  • 4 limes juice (about ¼ cup)
  • ¼ cup orange juice
  • 1 bunch cilantro
  • 1 small red onion, peeled and cubed
  • 1 whole head garlic, each clove peeled
  • 1 teaspoon ground clove
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 1 cup beef bone broth
  • 4 pieces bay leaves

Instructions

  1. Blend chipotle peppers, adobo sauce, lime juice, orange juice, cilantro, red onion, garlic, ground clove, cumin, and oregano until smooth.
  2. Heat the Instant Pot on the Sauté setting.
  3. Season the brisket with salt and pepper, then sear in the Instant Pot with grape seed oil for 4-5 minutes on each side.
  4. Pour the chipotle mixture over the browned beef, then add beef bone broth and bay leaves.
  5. Seal the lid and set the Instant Pot to the Meat/Stew setting for 1 hour.
  6. After cooking, use the Natural Pressure Release method to release the pressure.
  7. Remove the meat, shred it with forks, and return it to the pot. Garnish with cilantro before serving.
