Balsamic Roasted Vegetables

Ingredients

The vegetables

  • 4 oz raw broccoli florets
  • 7 oz raw cauliflower florets
  • 8 oz raw yellow Summer squash, chopped
  • 8 oz raw zucchini, chopped
  • 7 oz raw carrots, chopped
  • 5.5 oz raw red onion, chopped

The dressing

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons Balsamic vinegar
  • to taste Salt

Instructions

  1. Preheat the oven to 425°F and prepare a baking sheet with cooking spray.
  2. In a large bowl, mix all the vegetables together.
  3. Drizzle olive oil and Balsamic vinegar over the vegetables and add salt to taste.
  4. Toss the vegetables to coat them evenly.
  5. Spread the vegetables on the prepared baking sheet.
  6. Roast in the oven for about 25 minutes or until caramelized.
