Easy One Pan Chicken and Potatoes

Ingredients

The chicken

  • 1 lb skinless and boneless chicken thighs
  • 1 teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • 1 tablespoon olive oil

The potatoes

  • 12 oz red potatoes, cut into wedges
  • 8 cloves garlic, peeled
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter, melted
  • ¼ teaspoon salt
  • 3 dashes Italian seasoning
  • 1 teaspoon fresh rosemary, roughly chopped (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter, melted

Instructions

  1. Marinate the chicken with smoked paprika, Italian seasoning, salt, and olive oil, then set aside.
  2. Heat a cast-iron skillet over medium-low heat, add olive oil and butter, then garlic, potatoes, and remaining ingredients. Cook until potatoes are browned and cooked through, about 10-15 minutes, then set aside.
  3. In the same skillet, add olive oil and butter, then pan-fry the chicken for about 4-5 minutes on each side until golden brown.
  4. Push the chicken to one side and add the potatoes, seasoning with additional salt to taste. Turn off the heat and serve immediately.
