Gingerbread Molasses Cookies

Ingredients

  • cup salt-free almond butter
  • ¼ cup molasses
  • 2 large eggs
  • ½ cup coconut sugar
  • 2 ½ tbsp coconut oil, softened
  • ¾ tsp vanilla extract
  • ½ tsp baking soda
  • cup coconut flour
  • 2 ½ tsp Primal Palate Gingersnap seasoning
  • a pinch sea salt

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, combine all the wet ingredients and coconut sugar, then blend until smooth.
  3. Add the remaining dry ingredients and mix until well combined.
  4. On a parchment-lined baking sheet, form small balls of dough and slightly flatten them.
  5. Sprinkle the tops with coconut sugar.
  6. Bake for 10 to 11 minutes and enjoy!
