Ingredients

The chicken and marinade

  • 1 lb boneless skinless chicken breast, cut into 1 inch chunks
  • ½ cup dill pickle juice
  • ½ cup buttermilk

The coating

  • 1 ¼ cup all-purpose flour
  • 1 tablespoon confectioners sugar
  • 1 teaspoon salt
  • 1 teaspoon sweet paprika
  • ½ teaspoon baking powder
  • ½ teaspoon black pepper

For frying

  • 2 inches vegetable oil

Instructions

  1. Combine chicken chunks, dill pickle juice, and buttermilk in a large zip-lock bag and seal it.
  2. Massage the marinade into the chicken and refrigerate for 60-90 minutes.
  3. Heat 1 ½ to 2 inches of oil in a skillet or Dutch oven to 350-365°F.
  4. In a bowl, whisk together flour, powdered sugar, baking powder, paprika, salt, and black pepper.
  5. Remove chicken from marinade, letting excess drain, and discard the marinade.
  6. Coat chicken pieces with the flour mixture thoroughly.
  7. Carefully add the coated chicken to the hot oil in batches, frying for 3 to 5 minutes until golden brown and cooked through.
  8. Remove nuggets from oil and drain on a wire rack or paper towels.
  9. Serve with your choice of dipping sauces.
