Ingredients

The veggies

  • 1-2 pounds raw assorted farmers market veggies (radish, salad turnips, cucumber, kohlrabi, jicama, snap peas, carrots, broccoli, cauliflower, tomatoes, peppers)

The dips

  • ¼ cup sour cream (or Mexican Sour Cream)
  • ½ teaspoon smoked paprika (or sub chipotle powder)
  • 1 lime squeeze lime to taste
  • teaspoon salt, more to taste
  • 1 package silken tofu
  • ¼ cup olive oil
  • ¼ cup lime juice
  • ¾ teaspoon kosher salt
  • ½ bunch cilantro
  • 2 cloves garlic
  • ¾ cup sour cream
  • ¼ cup mayo
  • 1 clove garlic
  • 2 teaspoons lime juice
  • ¼ teaspoon salt
  • 1 lime for Mexican Style Seasonings
  • 1 pinch salt and pepper
  • 1 pinch chili powder to taste

Instructions

  1. Arrange the chopped veggies on a plate.
  2. Choose a dip or two, or try the lean Mexican Style option.
  3. For the cilantro lime dips, blend all ingredients until smooth.
  4. The Smoky Paprika Dip can be stirred in a bowl with a fork.
  5. For the Mexican Style, squeeze lime over the veggies and season with salt, pepper, and chili powder.
