Apple-Stuffed Pork Loin with Moroccan Spices

The pork

apple juice
Instructions
- Preheat the oven to 450°F.
- Melt the butter in a skillet over medium heat, then add the apples, onion, spices, salt, and pepper, cooking until soft, about 15 minutes.
- Insert a thin knife into both ends of the pork loin to create a pilot hole, then use a wooden spoon handle to widen the hole.
- Stuff the pork with the apple-onion mixture and sprinkle with salt and pepper.
- Transfer the pork to a baking dish and pour apple juice at the bottom.
- Roast for 15 minutes, then reduce the heat to 325°F and continue roasting, basting with apple juice every 15 minutes.
- Check the roast after 45 minutes; it should reach an internal temperature of 145°F.
- Transfer the roast to a platter, spoon sauce over it, slice, and serve.
