Apple-Stuffed Pork Loin with Moroccan Spices

Ingredients

The stuffing

  • 1 tablespoon butter or oil
  • 2 medium apples, peeled, cored, and thinly sliced
  • 1 large onion, chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • ½ teaspoon ground turmeric
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

The pork

  • 2 ½ lb boneless pork loin roast
  • 1 cup apple juice

Instructions

  1. Preheat the oven to 450°F.
  2. Melt the butter in a skillet over medium heat, then add the apples, onion, spices, salt, and pepper, cooking until soft, about 15 minutes.
  3. Insert a thin knife into both ends of the pork loin to create a pilot hole, then use a wooden spoon handle to widen the hole.
  4. Stuff the pork with the apple-onion mixture and sprinkle with salt and pepper.
  5. Transfer the pork to a baking dish and pour apple juice at the bottom.
  6. Roast for 15 minutes, then reduce the heat to 325°F and continue roasting, basting with apple juice every 15 minutes.
  7. Check the roast after 45 minutes; it should reach an internal temperature of 145°F.
  8. Transfer the roast to a platter, spoon sauce over it, slice, and serve.
