Ingredients

  • 1 lb. pork loin
  • 2 Tbsp. Dijon or spicy brown mustard
  • 2 Tbsp. olive oil or avocado oil
  • 1 Tbsp. maple syrup (optional)
  • 4 cloves garlic
  • 1 Tbsp. fresh rosemary
  • 2 tsp. fresh thyme leaves
  • ¾ tsp. salt
  • ¾ tsp. black pepper
  • 1 lb. Brussels sprouts
  • 2 medium apples
  • 1 small red onion

Instructions

  1. Preheat the oven to 400°F.
  2. Line a large baking sheet with parchment paper or a silicone mat.
  3. In a small bowl, mix the mustard, 1 Tbsp. oil, maple syrup (if using), garlic, rosemary, thyme, ½ tsp. salt, and ½ tsp. pepper to create the rub.
  4. Place the pork loin on the baking sheet and coat it with the mustard mixture.
  5. Add the Brussels sprouts, apples, and onions around the pork loin, drizzle with 1 Tbsp. oil, and season with ¼ tsp. salt and pepper.
  6. Bake uncovered for 25-30 minutes, tossing the vegetables halfway through. The pork is done when it reaches 140°F internally.
  7. Remove from the oven, tent with foil, and let rest for 5 minutes before slicing and serving.
