One-Pan Pork Loin with Brussels and Apples

Instructions
- Preheat the oven to 400°F.
- Line a large baking sheet with parchment paper or a silicone mat.
- In a small bowl, mix the mustard, 1 Tbsp. oil, maple syrup (if using), garlic, rosemary, thyme, ½ tsp. salt, and ½ tsp. pepper to create the rub.
- Place the pork loin on the baking sheet and coat it with the mustard mixture.
- Add the Brussels sprouts, apples, and onions around the pork loin, drizzle with 1 Tbsp. oil, and season with ¼ tsp. salt and pepper.
- Bake uncovered for 25-30 minutes, tossing the vegetables halfway through. The pork is done when it reaches 140°F internally.
- Remove from the oven, tent with foil, and let rest for 5 minutes before slicing and serving.
