Ingredients

Pork Tenderloin and Baked Apples

  • 5 pounds pork tenderloin
  • 1 teaspoon salt
  • teaspoon garlic salt
  • teaspoon seasoning salt
  • 1 dash black pepper
  • ½ teaspoon rosemary
  • 1 cup water
  • 4 large Granny Smith apples, sliced
  • 1 cup brown sugar
  • 4 tablespoons butter, melted

Roasted Asparagus

  • 2 ½ pounds fresh asparagus
  • 2 tablespoons good olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup freshly grated Parmesan
  • 2 lemons cut in wedges, for serving

Instructions

  1. Preheat the oven to 350°F for the pork tenderloin.
  2. Place the pork in a roasting pan and mix the seasoning ingredients.
  3. Sprinkle the seasoning mixture over the pork and cook for about 30 minutes.
  4. Add 1 cup of water, cover with foil, and cook for another 1 ½ hours at 225°F.
  5. Let the pork sit for about 10 minutes before slicing.
  6. For the baked apples, preheat the oven to 325°F.
  7. Lay apple slices on a greased sheet pan, sprinkle with brown sugar, and drizzle with melted butter.
  8. Bake for about 15 minutes until brown.
  9. For the asparagus, preheat the oven to 400°F.
  10. Peel the bottom ½ of the asparagus if thick, lay in a single layer on a sheet pan, and drizzle with olive oil.
  11. Sprinkle with salt and pepper, roast for 15 to 20 minutes until tender, then sprinkle with Parmesan and return to the oven for another minute.
  12. Serve pork slices with baked apples and gravy, alongside roasted asparagus and lemon wedges.
