Instructions
- Marinate the pork loin in a mixture of lime juice, orange juice, maple syrup, garlic, and salt for at least 2 hours or up to 24 hours.
- Prepare the pan sauce by sautéing shallots in butter, then adding cider, chicken stock, and serrano chili. Simmer until reduced by half, then add heavy cream and continue to simmer until thickened.
- Sauté the sliced apples in butter and olive oil until golden, then add sage, salt, maple syrup, and a splash of cider. Set aside.
- Grill the marinated pork loin over medium heat, turning often until seared, then lower the heat and cook until the internal temperature reaches 140°F. Let it rest wrapped in foil for 10 minutes.
- Slice the pork loin and serve with the sautéed apples and pan sauce drizzled over top.
