Instructions
- Combine olive oil and lemon juice.
- Layer zucchini on a platter, seasoning each layer with salt, pepper, and drizzling with olive oil and lemon juice.
- Repeat layering until all zucchini is used.
- Let the zucchini marinate for at least 10 minutes.
- Top with fresh arugula and shaved Parmesan before serving.
