Ingredients

  • 2 medium zucchini
  • ½ lemon lemon juice
  • 4 tsp extra virgin olive oil
  • to taste kosher salt
  • to taste fresh black pepper
  • 1 cup baby arugula
  • ¼ cup shaved Parmesan

Instructions

  1. Combine olive oil and lemon juice.
  2. Layer zucchini on a platter, seasoning each layer with salt, pepper, and drizzling with olive oil and lemon juice.
  3. Repeat layering until all zucchini is used.
  4. Let the zucchini marinate for at least 10 minutes.
  5. Top with fresh arugula and shaved Parmesan before serving.
