Ingredients

The carrots

  • 1 pound thin rainbow carrots, sliced lengthwise
  • tablespoons olive oil
  • ½ teaspoon celtic sea salt
  • ½ teaspoon coriander

The tahini glaze

  • ¼ cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • ¼ teaspoon celtic sea salt
  • 5 drops stevia

Instructions

  1. Preheat the oven to 425°F.
  2. Place the carrots on a baking sheet.
  3. Drizzle the carrots with olive oil and sprinkle with salt and coriander.
  4. Roast the carrots for 20-25 minutes until golden.
  5. In a pint mason jar, combine tahini, olive oil, lemon juice, water, salt, and stevia, then stir to mix.
  6. Drizzle the tahini glaze over the roasted carrots and serve.
