Ingredients

The carrots

  • 2 lbs. carrots, peeled and cut into 1–1.5” sticks

The glaze

  • 2 tablespoons olive oil
  • ¼ cup raw honey
  • 1 teaspoon fresh thyme
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • to taste none flat leaf parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425ºF.
  2. In a small bowl, mix together honey, olive oil, garlic, thyme, salt, and pepper to create the glaze.
  3. In a medium bowl, toss the carrots with the honey mixture until evenly coated.
  4. Line a baking sheet with parchment paper and spread the carrots in a single layer.
  5. Bake for 20-25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
  6. Serve and optionally garnish with freshly chopped flat leaf parsley.
