Honey Glazed Carrots

Instructions
- Preheat the oven to 425ºF.
- In a small bowl, mix together honey, olive oil, garlic, thyme, salt, and pepper to create the glaze.
- In a medium bowl, toss the carrots with the honey mixture until evenly coated.
- Line a baking sheet with parchment paper and spread the carrots in a single layer.
- Bake for 20-25 minutes, tossing halfway through, until the carrots are tender and slightly caramelized.
- Serve and optionally garnish with freshly chopped flat leaf parsley.
