Ingredients

The carrots

  • pound baby carrots

The glaze

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3-5 cloves garlic, minced
  • 1-2 teaspoon fresh thyme
  • 3 tablespoons honey
  • to taste salt and pepper
  • as needed cooking spray
  • for garnish parsley, chopped

Instructions

  1. Preheat the oven to 400℉ (205℃) and grease a baking pan.
  2. Scrub and wash the baby carrots, then set aside.
  3. In a skillet, heat the butter and olive oil over medium heat until melted.
  4. Add the minced garlic and thyme to the skillet, cooking until fragrant.
  5. Stir in the honey until fully combined with the other ingredients.
  6. Add the carrots to the skillet, coating them thoroughly with the glaze.
  7. Transfer the glazed carrots to the greased baking pan in a single layer.
  8. Drizzle any remaining sauce over the carrots.
  9. Roast the carrots in the oven for 18-20 minutes until fork-tender.
  10. Season with salt and pepper, and cook for an additional minute.
  11. Transfer to a serving platter, including any remaining sauce, and garnish with parsley.
