Instructions
- Preheat the oven to 400℉ (205℃) and grease a baking pan.
- Scrub and wash the baby carrots, then set aside.
- In a skillet, heat the butter and olive oil over medium heat until melted.
- Add the minced garlic and thyme to the skillet, cooking until fragrant.
- Stir in the honey until fully combined with the other ingredients.
- Add the carrots to the skillet, coating them thoroughly with the glaze.
- Transfer the glazed carrots to the greased baking pan in a single layer.
- Drizzle any remaining sauce over the carrots.
- Roast the carrots in the oven for 18-20 minutes until fork-tender.
- Season with salt and pepper, and cook for an additional minute.
- Transfer to a serving platter, including any remaining sauce, and garnish with parsley.
