Ingredients

The carrots

  • 1 ½ pound carrots

The glaze

  • 2 tbsp oil of choice or butter
  • 2 tbsp honey
  • 1 tsp balsamic vinegar
  • pinch sea salt
  • 3 tbsp fresh chives

Instructions

  1. Heat a cast iron skillet over medium heat and add oil or butter.
  2. Once hot, add sliced carrots and cook for 5-7 minutes until they start to char.
  3. Add 2-3 tablespoons of water and mix well.
  4. Reduce heat to low, cover with a plate or lid, and cook for 5 minutes.
  5. Remove from heat and stir in honey and balsamic vinegar.
  6. Add sea salt to taste and top with fresh chives.
