Honey Glazed Carrots

Instructions
- Preheat the oven to 400°F (204°C) and prepare a baking pan with cooking spray.
- If using baby carrots with leafy tops, cut off the tops and wash the carrots.
- In a skillet over medium heat, melt the butter and olive oil.
- Add the garlic and thyme, cooking until fragrant.
- Stir in the honey until well combined.
- Add the carrots to the skillet and coat them in the sauce, seasoning with salt and pepper.
- Transfer the carrots to the prepared baking pan in a single layer and drizzle with any remaining sauce.
- Roast in the oven for 18-20 minutes until fork-tender.
- Serve on a platter and garnish with chopped parsley.
