Ingredients

The carrots

  • 1 ½ pound baby carrots with stems or small carrots

The sauce

  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 3-5 cloves garlic
  • 1-2 teaspoons fresh thyme
  • 3 tablespoons honey
  • to taste salt
  • to taste pepper
  • as needed cooking spray
  • as needed chopped parsley for garnishing

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking pan with cooking spray.
  2. If using baby carrots with leafy tops, cut off the tops and wash the carrots.
  3. In a skillet over medium heat, melt the butter and olive oil.
  4. Add the garlic and thyme, cooking until fragrant.
  5. Stir in the honey until well combined.
  6. Add the carrots to the skillet and coat them in the sauce, seasoning with salt and pepper.
  7. Transfer the carrots to the prepared baking pan in a single layer and drizzle with any remaining sauce.
  8. Roast in the oven for 18-20 minutes until fork-tender.
  9. Serve on a platter and garnish with chopped parsley.
