Ponzu Roasted Salmon

Instructions
- Preheat the oven to 325°F.
- Coat the sweet potatoes with 1 tablespoon of olive oil and season with salt, then roast until tender for 30-40 minutes.
- Halfway through roasting the potatoes, coat the salmon with 1 tablespoon of olive oil, season with salt, and roast until just opaque in the center for 16-18 minutes.
- In a small bowl, mix ginger, garlic, lime juice, tamari, honey, sesame oil, and the remaining olive oil, seasoning with salt.
- Break the potatoes and salmon into large pieces, divide them along with celery and pear among plates, drizzle with the ponzu dressing, and top with scallions and sesame seeds.
