Ponzu Roasted Salmon

  • 2 small sweet potatoes
  • 4 tablespoons extra-virgin olive oil
  • 1 ounce skin-on salmon fillet
  • 1 inch piece ginger
  • 1 small garlic clove
  • 3 tablespoons fresh lime juice
  • 1 tablespoon tamari or soy sauce
  • ½ teaspoon honey
  • ¼ teaspoon toasted sesame oil
  • 2 stalks celery
  • 1 small Asian pear

For serving

  • to taste sliced scallions
  • to taste toasted sesame seeds

Instructions

  1. Preheat the oven to 325°F.
  2. Coat the sweet potatoes with 1 tablespoon of olive oil and season with salt, then roast until tender for 30-40 minutes.
  3. Halfway through roasting the potatoes, coat the salmon with 1 tablespoon of olive oil, season with salt, and roast until just opaque in the center for 16-18 minutes.
  4. In a small bowl, mix ginger, garlic, lime juice, tamari, honey, sesame oil, and the remaining olive oil, seasoning with salt.
  5. Break the potatoes and salmon into large pieces, divide them along with celery and pear among plates, drizzle with the ponzu dressing, and top with scallions and sesame seeds.
